RAINER GANAHL - FOOD FOR THE HYSTERICAL NEW YORK ARTIST

BREAKFAST: CHOCO PEAR CARROT FIX

INGRIDIENTS:
Half of an organic pear, a small piece of dark 72% cacao chocolate, one organic carrot
METHOD OF COOKING:
No cooking
COMMENT:
Mornings should be inspiring. 72 % cacao Swiss chocolate guarantees relaxation. I hand carry in large amounts of cacao from the discount chain Migros where it sells for about one dollar. Eat very small portions of chocolate allowing the chunks to melt in your mouth over time. This is pure excitement. Buying high quality chocolate decreases the need for psychological aid in this stressful city. The organic pear should also be eaten in petite quantities to prevent excess sugar intakes. Organic food tastes better than other foods. The same companies that destroyed the quality of American food are now also trying to sell organic products. Chocolate is not only an anti-depressant and an aphrodisiac but it also boosts the mnemonic functions that I need for my daily studies.

 

 

MAIN COURSE 1 (LUNCH) – BASIC CBB FORMULA

INGRIDIENTS:
Carrots, broccoli, beans (canned), onions, avocado (optional), sardines (canned, optional), salt
METHOD OF COOKING:
1. Cut onions and the rest of the vegetables
2. stir them in a bit of oil, starting with the onions. Don’t put the avocado and the beans in yet
3. stir them for approximately 4 minutes and then add the beans.
4. add the salt and if you like it spicy add red pepper and garlic
5. serve on a plate together with the avocado and sardines.
COMMENT:
This food is good for losing weight, staying in shape, and for maintaining the ideal austere life style of a young New York artist. This Basic food recipe can be made with or without the beans. The food is well suited for reheating. Larger amounts may be also kept frozen for a long time. In case you don’t have an avocado or sardines, you still can enjoy this delicious simple dish. You may mix this recipe easily with other leftovers. The acronym CBB stand for Carrots, broccoli and beans. Filtered tap water fits better than Florida orange juice.

 

 

MAIN COURSE 2 (DINNER) – TUNA TOFU MUSTARD GREENS

INGRIDIENTS:
Organic mustard greens (Feuilles de Moutarde), 2 eggs, silken tofu, katsubushi (fish stock), soy sauce, organic beans, organic carrotts and celery, horse radish, tuna (canned), salt, pepper, and sauce made of miso paste, rice vinegar, cooking sake, sesame and sesame oil METHOD OF COOKING:
1. steam vegetables for 2 minutes only
2. lay out the mustard greens (feuilles de moutarde) and place two sunny side up eggs on top
3. cut the tofu in rectangle slices adding in some katsubushi and soy sauce
4. sauce for the steamed vegetables: mix the miso paste with rice vinegar, cooking sake, plus the sesame and sesame oils
5. use generic canned tuna and grate it in with the horse radish and soy sauce
COMMENT:
This economic deluxe version is non-fattening and can be made in a short period of time. Make sure not to over-steam the vegetables. Tofu is a rich and inexpensive food that stabilizes the stomach. It makes you feel as though you have eaten something filling when you have not, decreasing the risk of getting fat. Canned tuna prevents head-spins and hunger pains that can accompany longer periods of not eating substantially.

 

 

DESERT – PRACTICAL DUCHT BANAN SPLIT

INGRIDIENTS:
Banana, radish, greens, Dutch cheese, herbal salt and pepper
METHOD OF COOKING:
1. Cut radish and slice up the banana
2. decorate it nicely and serve
COMMENT:
This food I first prepared for an exhibition in Holland. Dutch eating habits were not completely compatible with my low-carb diet since the Dutch are big bread eaters and I am not. (Only secretly.) To make my daily lunch more inspiring I invented a practical banana split that incorporates aspects of the different courses, but still passes as a desert.
I admit that not everybody enjoyed my cooking.
